Early Morning Fave, Challah French Toast

Day old Challah makes incredible french toast or bread pudding, but most any good quality, day old bread will work. Whole grain breads are good for you and are much yummier than some may think. Depending on your sin level for the week, use butter, but if you've been bad go for the smart balance spread, it's actually very good and it's all I use when I cook for myself.

Saute pan or griddle on medium heat.
Preheat oven to 200.
Whisk 3 eggs with 1 cup(ish) organic half and half, a pinch of sea salt, 2TB honey warmed in the micro, and 1 tsp vanilla. Nutmeg and a little citrus zest is a nice addition.
Dip sliced challah into egg mix and allow to rest for 30 sec to 1 minute, place on griddle 2 minutes and don't mess with it, just allow it to cook, after 2 min turn toast and allow to cook 1 to 1 1/2 minutes, place in oven and continue with remaining bread

Breakfast of Yogis

Yogurt, fruit, nuts and toasted rolled oats or barley is fast, filling and good for you on multiple levels. Skip the yogurts with fruit added, in order to add the fruit they are also adding preservatives and other things you really don't need, mixing up your own yogurt is sooo easy, try it once and you will never go back to the pre-mixed nonsense.


BTW: yogurt is the breakfast of American Yogis. India's traditional breakfast is more likely to be a delicious, and ultra nutritious, dahl

 A new study suggests our bodies are primed to eat high-fat meals upon waking, and that high-carbohydrate breakfasts (mmm, pancakes) set us up to be unable to process high-fat meals later in the day.....
Researchers from the University of Alabama at Birmingham and Baylor College of Medicine kept two groups of mice. One group got a high-fat meal upon waking and a low-fat meal before bedtime; the other had the low-fat meal first and the high-fat meal for dinner. Both groups of mice consumed “identical” amounts of total calories and calories from fat.  But the mice with high-fat breakfasts had “significantly lower body weights and body fat composition” than their counterparts who ate high-fat dinners, according to their study published this week in the International Journal of Obesity.
Those weren’t the only differences. The mice that began the day with more carbs developed insulin resistance, a condition that increases the risk for Type 2 diabetes and cardiovascular disease. They also wound up with more insulin, leptin and triglycerides circulating in their blood, which are also associated with diabetes and heart disease....more from Los Angeles Times

Dark Chocolate and Raspberry Croissants with Fresh Strawberries

okay, technically this is a puff pastry turnover.
A croissant would need to be crescent shaped........but, a turnover allows for smaller pastries with a higher chocolate to pastry ratio ......either shape results in delicious decadence.....and so easy!
Pepperidge Farm puff pastry, your favorite dark chocolate, raspberry jam, a 400 oven and 14-16 minutes

Perfect Hash Browned Potatoes



Begin with fresh potatoes, never frozen, preferably yukon gold. Shred with an old fashioned hand shredder, not a food processor, place in colander to remove liquid-pat dry with paper towel, add fresh cracked pepper and sea salt (fresh, minced herbs if desired), toss into hot pan ( just about to smoke) with a TB of olive oil, cook 4-5 minutes, turn and cook additional 5 minutes...
....do not disturb spuds in between turns. ..serve immediately...tiny splash of malt vinegar is heavenly!

Om Chef Enlightened Eggs Benedict

Yes! you can have little extravagance without killing yourselfEliminating the Canadian Bacon, no butter on English muffins, no added butter to poached eggs, replacing extra large eggs with the dainty small egg,
adding salad and fruit as sides, and absolutely not scrimping on the Hollandaise, is an example of controlled, but delicious indulgence. The star of eggs Benedict is the Hollandaise. Don't scrimp on the star, and for gods sake don't substitute with fake ingredients...please ;)
Save the egg whites for penance breakfast scramble the following morning, or freeze in a ziplock for up to 4mos.

There is no reason to be intimidated by Hollandaise, it is a simple emulsion of egg yolks, butter (traditionally clarified), lemon juice or vinegar and a flavor agent such as herbs . It can be made over a campfire, all it requires is your complete attention......but only for a few minutes.....commit to that, and it will be great! This a an excellent meditation, and practice of mindfulness...become one with your art

This is a Master recipe that can be practiced and fine tuned very inexpensively, and becomes Bernaise by replacing wine vinegar for the lemon and the addition of Tarragon, or Zabaglione by replacing lemon juice with Marsala or Proseco and adding sugar.....or Lemon Curd by adding sugar and increasing the lemon, and many more
