Stuffed Portobella and Zucchini

Portobella mushrooms are delectable and substantial single dish vegetarian meals when stuffed with nutty pesto sauteed tofu and topped with mozzarella and Parmagiano-Reggiano.  For the more carnivorous, sausage and onion with a fresh marinara, mozzarella and Parmagiano Reggiano

Miso Glazed Dofu, Pink Lentils,

Miso, cranberry, dried cherry glazed doufu, steamed kale, and cumin spiced pink lentils.

Marinate and broil extra tofu for a fab  addition to soup or salad, or the star in an excellent sandwich tomorrow or the following day.

Marsala, Chicken or Tofu




 ingredients for Chicken or Tofu Marsala, mushrooms, fresh sage, Marsala, and shallots, onions, and garlic are optional. Traditionaly chicken or tufu is lightly dredged in flour with S&P, but this is not necessary. Marsala and mushroom blend is fab on grilled or broiled meats or tofu
